The journey of our oysters spans an 18-month cycle, from the time they are spawned in the hatchery to the time we harvest them Our oysters spend anywhere from 7 to 14 months on our farm before they are ready for harvest.During the first few weeks of their life, our oysters are nurtured in a hatchery until they are large enough to be transferred to the farm. Our team carefully monitors the oysters' growth and health throughout their time on the farm, ensuring that they receive the ideal conditions to thrive.
We source our oyster seeds, also known as "spats," from approved hatcheries in NY, Massachusetts, and Maine. The spats typically measure between 9-25mm in length and are carefully transported to our farm.
UPON ARRIVAL, WE DISTRIBUTE THE SPATS INTO VEXAR BAGS AND CAGES, ALLOWING THEM TO ACCLIMATE TO THEIR NEW ENVIRONMENT AND BEGIN THEIR GROWTH PROCESS.
Oysters naturally grow at different rates, so every few weeks we carefully sort and redistribute our oysters to ensure optimal growth and minimal mortality.
BY SORTING AND REDISTRIBUTING OUR OYSTERS REGULARLY, WE HELP ENSURE THAT EACH OYSTER HAS ACCESS TO THE NUTRIENTS AND SPACE IT NEEDS TO GROW AND MATURE AT ITS OWN PACE.
After seven months in our nursery pond, our oysters are ready for harvest. Once the oysters have passed our quality check, we transfer them to our deeper water beds in the Long Island Sound.
THESE BEDS OFFER PROTECTION FROM STORMS AND FROST, AND ALLOW US TO CONTINUE HARVESTING THROUGH THE WINTER MONTHS.
When the oysters reach maturity, we carefully harvest them by hand. Our oysters are then washed and packaged to preserve their freshness and flavor until they are ready to be enjoyed by our customers.
Once the oysters have been carefully packed and iced, they are transported in our HACCP-approved refrigerated van directly to our clients and distributors.

Besides providing seafood, oysters make the water healthier. Oysters feed by filtering algae from water, they function as a natural filter and improve water that is overloaded with nutrients. A single oyster filters up to 50 gallons of water per day.
Farmed oysters and other shellfish feed by moving water in and out through gills, which capture solid particles from the water. The animal consumes the solid particles and expels clearer, unused water. Through the simple act of feeding, oysters remove excess nutrients, sediment, and other particles from waterways, which clears the way for sunlight to benefit entire ecosystems.
Through feeding, oysters also absorb nitrogen from the water around them. Harvested oysters bring this excess nitrogen with them, clearing it from the ecosystem.Through their waste matter, oysters also help to cycle nitrogen back into water, where it is then used to sustain other organisms, such as phytoplankton.
